I would recommend taking a look at a Glen-L Squirt or TNT. The plans along with the boatbuilding in plywood book should be enought to do it. These allow youto ride with the kids.
Another thought is to go a bit bigger so they can wakeboard behind it. Most of our family time on the water is spent baording, tubing, skiing, rather than (just) driving around or fishing.
Look in the Glen-L project registry and photo boards. Lots of success stories.
Boatbuilding is a great family project. When people are looking at or discussing our boat, my kids make sure that I mention that they helped build it. If you look at my web site you will see a number of shots with the kids in them. They were 10, 11, 15 when we built it.
