Boatbuilder Magazine ran a pair of articals by a guy who designed and built a s/g cruiser. What impressed me most was how much went into the design, on paper, and how much structural support was installed inside the hull. If you had his knowledge and design skill, then maybe you could do what you suggest - MAYBE! Remember that the lines have to be "developable" in plywood, and that the strength of the hull depends on much more than the skin, even in s/g.
