Twice you mentioned that time was of the essence... If time really is bitting at your heels, go buy a used plastic boat- they're all over, in good shape & cheap for what you get. Once you've gotten the "Gotta Cruise!" out of your systems, sell the plastic boat & use the money to buy the materials to really enjoy the boat building process! :-)
If you're still amped to build your own boat ASAP, stick with the medium you know well- how long do you think you'll have to practice welding before you feel comfortable enough with your results to trust your own and your famillys' lives with your welds holding up in the middle of an ocean storm?
Just my thoughts... Whatever you decide to do, just be sure to ENJOY the results! :-)
