When I was a kid in the sixties, I built a little 9-footer with a 35hp engine and one center seat. For the seat bottom I cut a piece of plywood with a straight front edge and semi-circle back. Then I wrapped a piece of galvanized steel around the back edge of the ply and cut the steel to an appropriate contour. Covered it with foam and vinyl and it worked great! The steel was more than strong enough, pretty light weight, and very easy to assemble.
Your project may demand a little more refinement than I used, but maybe it'll spark some ideas. Let me know what you settle on!
