As I see it, your problem is to, as accurately as possible, determine your woods moisture content. Deep inside, not only at the surface. Air drying means different things in different regions. I believe there are specialized devices that can do this. Once you know the moisture content, a knowledgeable source such as Gougeon Brothers could give you a better idea of the possibilities. If the wood is dry enough, why not? You just don't want to 'encapsulate' too much moisture into the wood.
