Bays and Offshore Boat Recommendation?

I am interested in building a boat to use in coastal bays and offshore up to 40 miles out. Can anyone make suggestions, and if they built a boat which one and how does it handle under these conditions. I am thinking about the V-Dory using twin 50-75hp outboards.

I appreciate any suggestions.
