The boat is still under construction in a heated garage. So I am not concerned about encasulating any moisture. But I have a very bad experience with a 25' glassfibre cruiser that every deck beam (the deck is reinforced with plywood) had rotted completely. This was probably a result form years of a very small leakage. I didn't notice until the pullers got loose.
Do you know what the C-C where treated with inside? If there is no really benefit of using epoxy I would probably use som "oil stuff" that breathe.
