Classic Mahogany Runabouts

My brother and I are going to be building a couple of mahogany runabouts(Monte-Carlo's). One thing that has been bugging me is that is seems like the whole hull gets a layer of fiberglass. I just don't think it will look nice enough that way. Can I just 'glass the waterline down? It seems like if the entire hull is epoxy encapsulated, then painted with a UV prohibitor like Varnish or Auto grade two part clear, it should hold up just fine. BTW, I will be using soild mahogany veneers for the outer layer, not ply.
